"The day a chef ceases to evolve is the day the apron should be turned in" is how renowned chef Nicole Bissonnette describes her journey to culinary success thus far. Through her dynamic creations at Bistro 157 and Venue in Valparaiso and Bartlett's Gourmet Grill in Beverly Shores, Bissonnette says she remains true to her cooking craft. "I believe in using the freshest ingredients available and using produce in its prime season," she explains. "I see my food as "contemporary comfort food" and try to keep flavors simple and light. I avoid combining too many flavors at once. Fusion is one thing, but "con-fusion" is the worst!"
