Several years ago, Panera Bread took the unusual step for a chain restaurant by making the pledge that all of the ingredients used in preparing their foods would be “100 percent clean.” It was a challenging, two-year-long process, but now none of the foods served at any of the Panera Bread restaurants contain artificial preservatives, sweeteners, flavors, or colors, trans fats, MSG or fructose corn syrup and saccharin.
Panera Bread CEO Ron Shaich says now their patrons have the ability to know what’s in the food they eat without having to bring either a food scientist or a dictionary along with them or do a Google search.
Shaich notes that many people have increasingly realized that a lot of additives and artificial preservatives that have become a mainstay in U.S. food production in the past half century aren’t good for them.
"So why do we want it in our food?" he asks.
