It wasn't too long ago that Mom was the cook in most families. How times have changed! Nowadays, it's a good possibility that Dad wields the spoon and spatula with expertise.
Reward him with a special breakfast this Father's Day. Let him relax while you rustle up some scrumptious scrambled eggs. The caramelized apples are the perfect accompaniment.
Pour the coffee and invite Dad to pull up a chair.
Yellow Pepper Scrambled Eggs with Ham, Sour Cream and Chives
4 English muffins, split, toasted and buttered
10 large eggs, beaten lightly
3 teaspoons chopped fresh chives, plus extra for garnish
1/2 teaspoon chopped fresh tarragon leaves
2 tablespoons butter
1 large yellow bell pepper, seeded and cut into 1/4-inch dice
1/2 cup cubed smoked ham
4 tablespoons sour cream
Salt and freshly ground black pepper to taste
* Keep toasted English Muffins warm in a very low oven along with plates for eggs. Lightly whisk eggs with chives and tarragon and set aside.
* In a nonstick skillet, melt butter over medium heat until foam subsides. Cook bell pepper cubes, stirring until softened. Add ham cubes and toss to warm. Add eggs and cook, stirring until almost cooked, about 3 minutes.
* Stir in sour cream and salt and pepper to taste. Cook until heated through and eggs are done to your Dad's liking.
* Pile eggs on 4 English muffins halves and sprinkle with extra chives. Serve on heated plates with brown sugar apples and extra English muffins.
Makes 4 servings.
Brown Sugar Apples
4 McIntosh apples (about 1-1/2 pounds total)
6 tablespoons light brown sugar
* Core, peel and cut apples into quarters. Place them in large nonstick skillet and sprinkle evenly with sugar.
* Place pan over medium heat, stirring occasionally until apples are tender and caramelized by melted brown sugar (about 10 minutes).
* Remove from heat, cover and keep warm until ready to serve with eggs.
Note: You will need a nonstick skillet for these.
Makes 4 servings.
