Since this is pumpkin season, the column is devoted to two reader favorite recipes involving this tasty autumn garden goodie. More about the happenings in the Eicher household next week!

Pumpkin Sheetcake

2 cups sugar

4 eggs

1 cup vegetable oil

2 cups flour

1 cup chopped nuts

2 cups fresh pumpkin or 1 can

1/2 teaspoon salt

1 teaspoon baking soda

2 teaspoons baking powder

2 teaspoons cinnamon or pumpkin pie spice

DIRECTIONS: Preheat oven to 350 degrees. In a large bowl, mix all ingredients together and pour into a sheet cake pan. Bake at 350 degrees for 20 to 25 minutes. Let cake cool and then add frosting.

Frosting Recipe:

1 8-ounce package cream cheese

2 sticks of softened butter

1/2 cup chopped nuts

Box of powder sugar

DIRECTIONS: Mix well and spread on cake after it is cool


1 cup sugar

1 tablespoons flour

1 teaspoon cinnamon

1 /2 teaspoon pumpkin pie spice

1 teaspoon salt

2 eggs, separated

1 cup pumpkin

1 cup milk

DIRECTIONS: Combine dry ingredients. Add egg yolks, milk, and pumpkin. Fold in beaten egg whites. Bake at 400 for 35-45 minutes or until toothpick comes out clean. Makes 1 9-inch pie
