Planning healthy menus for children with dietary restrictions is not as easy as waving a magic wand.

Tony and Carrie Hreha of Valparaiso are parents who know the importance of reading labels and asking questions about recipes.

While their one-year-old son Anthony, who is a big fan of Mickey Mouse, doesn't have any signs of food allergies, his older sister Aubrey, 4, must face what mom and dad call ingredient enemies.

"She's allergic to eggs, nuts, fish and dairy, which includes chocolate," Carrie said.

"We have to watch her diet very carefully at home and when we're out."

Fortunately, gluten hasn't proven to be a problem.

Education and awareness about special dietary needs for children begins with lessons learned at home, which is one of the reasons Disney teamed with Lilly Diabetes to create a new cookbook sharing a message of eating for children.

Aubrey, who dressed up as Snow White last Halloween, is a perfect example of how Mickey and his famous friends are the perfect fun faces to explain proper food choices. Amy Hess-Fischl, chair for the Diabetes Care and Education Practice Group of the Academy of Nutrition and Diabetes, was one of the primary contributors to the new cookbook called "Dishing It Up Disney Style: A Cookbook for Families with Type 1 Diabetes."

"While there is no specific meal plan that fits all families, this cookbook includes a wide variety of recipes that can be good choices for anyone," Hess-Fischl said.

"The step-by-step instructions are easy to follow, and Disney characters suggest tips for getting kids into the mix."

The 80-page hardcover book, available for free through pediatric endocrinologist offices or visit Family.com/Type1, also includes gluten-free recipes and listings for each recipe's serving size, calories, total fat, carbohydrates, fiber and protein.

"Now that the guesswork has been taken out of meal planning and nutrition calculation, it's time to enjoy cooking with the whole family," Hess-Fischl said.

"Sleeping Beauty" Princess Aurora's Applesauce Muffins

6 tablespoons butter

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

2 eggs

2/3 cup brown sugar

1 1/2 cups chunky applesauce

DIRECTIONS: Heat the oven to 375 degrees. Line a 12-cup muffin tin with baking cups and set aside. In a small microwave-safe bowl, melt the butter on high for about 30 to 60 seconds. Set aside to cool slightly. Sift together the flour, baking powder, baking soda, cinnamon and salt into a large mixing bowl. In another bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. Pour the apple mixture over the flour mixture. Mix with a wooden spoon until combined. It's ready when there are no traces of flour. Fill the baking cups about two-thirds full with batter. Bake for 20 minutes until lightly brown. Makes 12 muffins.

Lady and Tramp's Cartwheels with Tomato Sauce

4 1/2 tablespoons olive oil

1 medium onion, finely chopped

1 medium green bell pepper, finely chopped

1 small carrot, grated

1 clove garlic, minced

4 1/2 cups (about 42 ounces) crushed tomatoes in puree

2 teaspoons dried basil

1 teaspoon dried oregano

1/2 scant teaspoon salt, plus 2 teaspoons for the cooking water

Freshly ground black pepper to taste

1/2 pound smoked turkey sausage, quartered, lengthwise and diced

3/4 pound round cartwheel pasta

Grated Parmesan cheese for garnish

DIRECTIONS: Heat 2 1/2 tablespoons of olive oil in a medium saucepan. Add the onion, pepper and carrot. Partially cover the pan, then "sweat" the vegetables over moderate heat for about 8 minutes, stirring occasionally, until the onion is translucent. Add the garlic and cook for 30 seconds. Add the tomatoes, basil, oregano, salt, pepper and sausage. (Note: Smoked sausage is pre-cooked. Do not substitute raw sausage.) Cover the pan and cook the sauce at a gentle simmer for 15 to 20 minutes, stirring occasionally. While the sauce simmers, bring 4 to 5 quarts of water to a boil and add 1 tablespoon olive oil and 2 teaspoons salt. Gradually add the cartwheel pasta and cook according to package instructions. Drain the cooked pasta and transfer it to a large serving bowl. Drizzle with 1 tablespoon of olive oil and toss briefly. Spoon one-third of the sauce over the pasta and toss again. Ladle on the rest of the hot sauce and sprinkle with Parmesan cheese, serving immediately. Makes 8 servings.
