October in Indiana is my most favorite time of year. The weather has cool nights and crisp days. The leaves on the trees share a beautiful blast of color with us before winter. And pumpkin is on sale at the grocery store. I love pumpkin recipes and so do my kids. A few weeks ago my waffle-loving child (a child after my own heart) asked if I could make pumpkin waffles. So on a Sunday morning I did just that. You're welcome :)
Pumpkin Waffles
- 2 1/2 cups of your favorite "just add water" pancake mix (I recommend Krusteaz)
- 1 1/4 cup water
- 2 TB oil
- 1 egg
- 1 cup canned pumpkin
- a couple generous dashes of cinnamon
- Mix all ingredients together, first with a spoon to get them to stick together and then with a whisk to get a little air in the batter. Don't overmix - there will be some lumps.
- Cook in your waffle iron, this makes approx 16 4-inch waffles.
Look at that - just two steps to pumpkin-y goodness on your breakfast (or breakfast-for-dinner) table!
