The preserves are made by using large open copper kettles to simmer the harvested produce.

Ryan Thornburg worked as head chef at both Tosi's Restaurant in Stevensville, Mich. and Bistro on the Boulevard in St. Joseph, Mich. before starting Thornburg and Company. He had alliances with local fruit and vegetable farms from his work with the restaurants and was able to leverage those relationships to secure the pick of the crops used in his preserves.
